The Easiest Vegan Banana Bread
This easy banana bread is actually jam packed full of goodness! 3 whole bananas in the loaf, along with almond meal and the goodness of oats (but we actually made them taste delicious).
We love a good banana bread and have shared a few recipes over the years, this one is nice and soft and healthy enough to enjoy for breakfast (we did and highly recommend for a slow Sunday!). We also used blueberries in our loaf, but you can sub these for walnuts, chocolate, dates, or a mix of a few things.
Yield: 1 loaf banana bread (8 - 10 serves)
Time: 60 minutes baking plus 15 minutes mixing and mashing
You will need:
- 1/4 cup melted coconut oil or an alternative fat
- 3 bananas
- 1/4 cup maple or rice malt syrup
- 1 tablespoon vanilla
- 1 teaspoon cinnamon powder
- 1 + 1/2 cups oat flour
- 3/4 cup almond meal
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 cup frozen blueberries
Preheat the oven to 170 d C. Line a loaf pan with baking paper and set aside
Mash the bananas in a medium sized bowl, once soft, add in the coconut oil, maple syrup, and vanilla and mix to combine.
Next add in the oat flour, almond meal, baking powder and soda. Mix well.
Add the blueberries into the bowl and mix through; working quickly to ensure they don't bleed. Alternatively, you can coat the blueberries in some gluten free flour prior to adding into the mix, this helps them from colouring the banana bread. We don't mind a bit of marble, so we pop ours in uncoated.
Pour this into your tin and bake for 60 minutes, or until a toothpick comes out clean.
Allow to cool, pull out of the tin, slice + enjoy!
