Easy As Banana Bread (With Tahini)

HOW GOOD IS BANANA BREAD? Sorry for yelling, but this tahini version is our new favourite. It is super soft, but also dense and hearty. You can mix it up with your eyes closed (seriously, it’s that easy!) and it is also naturally gluten free and vegan. Bonus!

Time: 1 hour (includes baking)

Serves: 8-10 very generous serves

  • 3 medium bananas

  • 1/3 cup tahini

  • ¼ cup maple syrup OR stevia if you’d like to make this sugar free

  • 2 flax eggs

  • 2 cups almond meal

  • 1 teaspoon baking powder

  • Cinnamon and vanilla to taste

  • Choc chunks

  • Extra tahini to serve

How good are one bowl wonders?

  1. Line a loaf tin with baking paper and preheat the oven to 170 d Celcius.

  2. Simply mash bananas in a medium bowl, add in the tahini, flax eggs and vanilla. Mix to combine.

  3. Add in the almond meal, baking powder, cinnamon and mix to combine. Add the choc chunks.

  4. Pop into prepared loaf pan and pop into the oven. Bake for 30 - 45 minutes or until a skewer comes out clean.

  5. Let cool in pan

  6. Slice and enjoy!
