12 Days Of Christmas: Choc Coconut Berry Cups

This year we have prepared a handful of our favourite desserts, triple tested them and are bringing them to you – healthy but just as delicious. So without keeping you any longer than necessary, second up on our Christmas dessert list, and day 2 of our 12 days of Christmas, are these delicious coconut and berry filled chocolate cups.

We love nut butter cups, so thought we’d give them a festive twist! These cups are super quick to whip up and are sure to impress your guests. As a bonus, this recipe will include a cheats guide if you're short on time!

So, without further ado, lets get chocolate making!

For this recipe, you will need:

  • 1 cup cacao butter

  • 1 cup cacao powder

  • 1 teaspoon vanilla

  • 4 tablespoons rice malt syrup

  • 1/2 cup berries (frozen is fine, thaw prior to using)

  • 1/2 cup desiccated coconut

  • 1/4 cup cacao nibs (optional)

Preparation is key with this recipe. Have both the berry mix and chocolate ready before you begin. 

First measure out berries and coconut into a mixing bowl. Mix together, squashing the berries so the coconut is slightly moistened. Add 2 tablespoons rice malt syrup and combine. This ensures the berry mix doesn't freeze completely solid. 

Next, melt cacao butter over heat with double boiler. Once liquid, remove from heat and whisk through cacao powder until combined. Add vanilla and 2 tablespoons of rice malt, usually we omit this when making chocolate, but it's Christmas, so, go wild! 

Now for the fun part! The assembly! Place reusable mini muffin liners onto baking tray or chopping board; anything that is flat and will fit into your freezer is perfect. Add spoonfuls of the chocolate mix into liners until they are 1/4 full. Sprinkle cacao nibs on top. Next, add a spoonful of the berry mix and move to next liner. Continue until your liners have chocolate and berry mix in them, but make sure to save some chocolate for topping the berries.

Once the chocolate and berries are in the liners, pop your tray into the freezer for 5 to 10 minutes, then pull them back out of the freezer, top each with the remaining chocolate and finish with cacao nibs then place back into the freezer until completely firm.

Cheats version. 

Okay we know how crazy Christmas can get, but we don't want you to miss out, so we have a cheats version prepared for you!
For this recipe, you will need:

  • 200 grams dark chocolate (An easy to find go to is 85% Lindt Excellence or 85% Green & Blacks)
  • 1/2 cup dedicated coconut
  • 1/2 cup berries

Melt chocolate over double boiler, ensuring it doesn't get too hot/burn and prepare cups as above! If you don't have cacao nibs on hand, simply swap for crushed nuts or desiccated coconut. Yum!

This chocolate will keep at room temperate, but if the weather is a bit warmer, it might be easier preparing and storing these in the freezer. Cheats chocolate will keep even if left out!
