Sugar Free Choc Mint Bliss Balls
These bliss balls are refined sugar and fructose free, and full of healthy fats, making them the perfect AM or PM snack!
When making our bliss balls, we used 1/2 the mixture to make choc mint balls, and the second half to make double choc mint balls, because we are choc mint fiends.
You will need:
- 3/4 cup almond meal
- 3/4 cup oats (blended)
- 2 tablespoons desiccated coconut
- 2 tablespoons cacao nibs
- 2 tablespoons stevia (optional)
- 1 tablespoon chia seeds
- 1 tablespoon cacao powder
- 2 tablespoons coconut oil
- 2 tablespoons tahini (we used hulled)
- Peppermint essence
- Dash of water
Line a tray, chopping board, plate or anything within arms reach that is flat (and can placed in the freezer) with baking paper. Place to the side.
Get out a large mixing bowl and add the almond meal, oats, coconut, chia seed, stevia and cacao nibs. Mix until combined.
Next, melt the coconut oil until liquid, and mix the tahini into the oil. Pour this mix onto your dry ingredients and combine.
You will notice the mix is crumbly and not really staying together - don't stress, you're doing it right!
This is when you add a dash of water and the peppermint. Add just enough water for the mixture to stay together (we used 2 tablespoons).
Form 1/2 the batter into balls and place onto your previously lined tray. We managed to make 8.
Next add the cacao powder to the second half of the mix, combine and make another 8 balls!
