No Bake Caramel Bars (Vegan, GF)

Happy 2019! Can you guys believe that the first month of the year is almost over?!

Time is flying. That’s why you have to slooow down, make and then enjoy these beauties!
These no bake caramel bars are our new fav “it’s almost Friday” treat 😋 They’re a one blender wonder and stupidly easy to whip up.

Base

  • 3/4 cup macadamia nuts

  • 1/4 cup desiccated coconut

  • 2 tablespoons coconut oil, melted

  • 1 tablespoon rice malt syrup

Blend the macadamia and coconut in a high-speed blender, then add the coconut and RMS. Blitz until combines. Press into lined loaf tin. Pop into freezer. Meanwhile make the caramel..

Caramel

  • 1 and 3/4 cup soft dates, pitted

  • 3/4 cup unhulled tahini

  • 2 tablespoons peanut butter

  • A pinch of salt

  • 1/4 cup coconut milk

Add all of your ingredients to a high-speed blender and blend until smooth and creamy. Pour onto your base, smooth the top and pop into the freezer for 3-4 hours or until set.

Coating

  • 70 grams dark vegan chocolate

  • 2 teaspoons coconut oil

Slice the bars and coat. Enjoy!
