This recipe uses a few common ingredients and is so easy to do! We usually have coconut flakes on hand, but if you don’t, you can use any textured ingredient (nuts, seeds, puffed rice etc) to create the monsters. The most magical part of this recipe is you pull them out of the freezer, and pop on the eyes, they harden and actually look like monsters! They are firm and crunchy and take about 15 minutes from start to finish!
Mayver’s Halloween Monsters, two ways
Yield: 8 – 12 depending on size
Time: 10 minutes plus freezing time
2 cups coconut flakes
2 tablespoons rice malt syrup
¼ cup coconut oil
1 teaspoon cinnamon
Pinch of salt
1 tablespoon Mayver’s cacao spread
1 tablespoon Mayver’s peanut butter (we used the protein PB)
Line a sheet with baking paper and pop to the side
Melt half of the coconut oil (if not melted already) and then pour into a bowl, next, add in 1 tablespoon of the rice malt syrup and mix to warm through slightly. Add the plain peanut butter, cinnamon and pinch of salt to this and mix to combine.
Add half the coconut flakes and mix well. Pop to the side.
Repeat steps 2 and 3 with the cacao spread, except, omitting the cinnamon.
Add tablespoons-full of the mixture onto the sheet of baking paper and form monster like shapes. Pop into the freezer to firm.
Once firm, remove from freezer and decorate your monsters with eyes!
To make the eyes, we simply mixed some coconut flour with coconut butter, mixed until firm, rolled into circles and squashed onto the monsters.
