Peanut Butter & Jelly Chocolate Protein Cups


Who doesn’t love peanut butter cups? When we saw that Mayver's do a protein peanut butter, we knew what we had to create first. High protein, healthy peanut butter and jelly cups. In a single bite, you get a perfect mouthful of crunchy, salty, creamy peanut butter and jam filled goodness. The rice malt adds a softness to the peanut butter, so these babies are gooey and delish. Oh and the protein content in these totally makes up for the fact that they're chocolate.. Right?

Peanut butter cups

Yield: 12
Time: 20 minutes total

You will need:

12 mini muffin liners
A board to set them on


  • 1/4 cup cacao powder
  • Pinch of salt
  • 3 tablespoons rice malt syrup
  • 1/2 cup melted coconut oil

Peanut Butter FIlling

  • 3/4 cup Mayver's Protein peanut butter
  • 1 scoop vanilla protein powder (optional)
  • 2 tablespoons rice malt syrup
  • 4 tablespoons melted coconut oil
  • Pinch of vanilla extract

Jam Filling

  • 1 cup berries (we used raspberry + blueberry)
  • 1/4 cup water
  • ½ tsp vanilla extract
  • 2 tablespoons chia seeds
  • 2 tablespoons rice malt syrup


  1. Process the jam ingredients together (except the chia seeds) until nice and smooth. Add the chia seeds and stir until well combined. Allow to set in the fridge while you make the rest of your goodies. You can totally use ready made jam! Raspberry is our favourite flavour for these PB cups.
  2. In a medium sized bowl, stir all ingredients for the chocolate layer together until smooth. Scoop a spoonful into mini muffin liners - we use reusable rubber liners.
  3. Stir all ingredients for the peanut butter layer together until smooth and add 1 teaspoon of PB mix on top of the chocolate layer - as you can see from our photos, we didn't set our chocolate layer first because ain't nobody got time for that. Next, spoon on a layer of jam. Place in the freezer for 5-10 minutes
  4. Finally, make the top layer by plopping the rest of the chocolate layer onto the jam. 
  5. Place into freezer to firm. Enjoy!
  6. Store these babies in the fridge or freezer to enjoy for later.
