Deliciously Easy Choc Peppermint Slice

This slice is one of the easiest, and most delicious mint recipes we’ve created. All you need is a blender and a loaf tin! It comes together so quickly and looks pretty impressive when served up! The texture and flavour is crunchy, minty, coconut and chocolate combo, whats not to love?!

For the base you will need:

  • 1/4 plus 2 tablespoons coconut oil, melted

  • 1/4 cup cacao powder

  • 4 tablespoons almond butter

  • 2 tablespoons Natvia

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon peppermint extract

  • 1/2 cup unsweetened shredded coconut

  • 1/2 cup cup pecans (or any nuts)

  1. Line a small loaf tin with baking paper overhanging the sides for easy removal.

  2. Pop the base ingredients into a blender and blend until fine and crumbly. Press the mixture firmly into your prepared tin.

For the filling you will need:

  • 1 cup shredded coconut

  • 2 tablespoons boiling water

  • 1 tablespoon peppermint extract

  • 1 tablespoon coconut oil

  1. To make the filling, pulse the coconut with the water and peppermint until it is combined.

  2. Add the coconut oil and continue to pulse until the mix is nice and crumbly.

  3. Press the mixture on to the base and pop into the freezer for 10 minutes to set.

For the topping

  • 100 mls coconut cream

  • 6 tablespoons cacao powder

  • 4 tablespoons coconut oil, melted

  • 2 tablespoons Natvia

  • 1/2 teaspoon natural peppermint extract

  1. To make the topping, bring the coconut cream to a simmer in a small saucepan. Remove from the heat and add the coconut oil, cacao, peppermint, and natvia, mixing until combined.

  2. Set aside to cool and thicken slightly.

  3. When cooled, mix and pour onto the coconut filling. Pop into the fridge or freezer to set. Enjoy!
