12 Days Of Christmas: Gluten Free Spiced Cookies
These Christmas cookies made of spice and all things nice. They are a one bowl wonder and are full of flavour. We used plenty of spice, because - Christmas! We also drizzled some chocolate over the top for extra sweetness and an extra decorative look. These cookies are a perfect festive gift and work well throughout the silly season.
To make these, you will need:
- 1 1/3 cup almond meal
- 1/2 cup gluten free flour (coconut works well)
- 2 teaspoons cinnamon
- 2 teaspoons vanilla
- 1 teaspoon ginger
- 1 teaspoon all spice
- 1/4 cup coconut oil
- 1/4 cup rice malt syrup
- 85% + dark chocolate (optional)
- Festive cookie cutters
Place almond meal, coconut flour and all spices into a large bowl and mix thoroughly to combine. Add rice malt syrup, vanilla and coconut oil and mix through. You will need to keep mixing until the dough forms a ball. You may need to add some water to get the mixture to stick together. Two tablespoons should be plenty. Although allspice contains cinnamon, we added extra to make sure our cookies were super cinnamon-y. This dough keep it shape when baked, so keep this in mind when choosing the size of your cookies.
Preheat oven to 175°C. Roll out your dough onto a baking sheet, it shouldn't stick to the rolling pin, but if it starts to, just place a baking sheet on top, and roll between 2 baking sheets until desired thickness, we like ours nice and thin! Cut into shapes with cookie cutter and place onto trays lined with baking paper.
Repeat this process until you have used up all of your dough. Bae for 10 to 15 minutes and let cool on a wire rack. The cookies should be a golden brown around the edges and the middle should have a nice golden colour to it. Once cool, decorate cookies for some extra sparkle! We drizzled on melted dark chocolate and let this set at room temperature.
