12 Days of Christmas: Choc Almond Raspberry Delights
Continuing on with the use of all of the amazing Summer fruit currently on offer, these chocolate almond bites will make a delicious addition to your Christmas table! The combination of chocolate and nuts gives these bites a rich taste and texture, with the raspberries cutting through, adding a sweet freshness. A match made in dessert heaven.
This recipe is oh so simple, we feel silly even typing it out!
You will need:
- 1 cup almond butter
- 1/2 cup cacao powder
- 1/2 cup coconut oil
- 1/3 cup cacao butter
- 1/3 cup rice malt syrup
- A sprinkle of flaked almonds
- Sprinkle of chia seeds
- 1/2 teaspoon vanilla extract
Measure out ingredients and line a mini loaf pan with non stick paper or baking paper. A small reusable food storage container works just as nicely - you want something with a flat base and rectangular or square in shape.
Combine almond butter, cacao butter, coconut oil and rice malt over medium heat and stir until combined. Remove from heat, stir through vanilla and finally cacao powder. Mix until combined. The mixture should be thick and glossy. Doing a sneaky taste test will help you assess whether you need any extra bitterness from the cacao or sweetness from the syrup.
Next, add in a handful of flaked almonds and chia. You can use anything on hand, really! Coconut flakes or cacao nibs would suit just fine! Even the addition of crushed nuts would work, too! Mix your chosen add ins though. They give this dessert some texture and crunch!
Pour this liquid gold into your pre-lined loaf tin, pan or lunch box and top with berries. Place in freezer and when ready to enjoy, simply slice and plate! Too easy!
