12 Days Of Christmas: Choc Peppermint Bliss Balls
Hello peppermint. Hello chocolate. Hello another recipe as part of our 12 days of Christmas!
To make these peppermint beauties, you will need:
- 1 cup almond meal
- 1/4 cup cacao powder
- 1/4 cup rice malt syrup
- 1 teaspoon vanilla
- 1 teaspoon peppermint extract (or to taste)
Line a tray or anything flat and freezer friendly with baking paper.
Place almond meal and cacao powder into a bowl and combine. Add peppermint and vanilla and mix through. The mix will be slightly dry and crumbly. Don't worry, you're on the right track! Next, warm rice malt in a pan but don't boil. The aim is to make it nice and runny.
Add the rice malt to the your almond mixture and combine. If the mix is still too dry, add just enough water for the mixture to stay together (we used 2 tablespoons).
Scoop out heaped tablespoons of mixture, form the batter into balls and place onto your previously lined tray.
Roll balls in extra cacao and refrigerate for 30 minutes, or enjoy right away!
If you realllly want to make these special, add some tosated coconut and cacao nibs to your dry mix - YUM!
These delicious morsels can be stored in an airtight container in the fridge for up to a week, or in the freezer for up to 3 weeks.
